I know I'm late to the thread, but here's some suggestions from our house: sloppy joes chili- on hot dogs, french fries, english muffins, in a tortilla tacos- soft or crunchy fried egg sandwiches make a meatloaf recipe only bake them in small patty shapes- good by itself with a side; in toast for a sandwich; on a bun with some marinara (like a meatball sub); broken up with marinara and cooked pasta for quick spaghetti. tortilla wraps- I mix a little salsa and mayo, spread on tortilla, add roast beef slice and cheese, wrap with lettuce and tomato. Or tuna fish, egg salad, etc. Or heat a little, spread on peanut butter and sliced bananas. My kids like them with refried beans and cheese lately. "Dippers"- make grilled cheese sandwiches but cut into fingers- dip in soups, or Ranch dressing, or one son even likes to dip in applesauce! spaghetti with pepperoni- because it's different than what I make for dinner! I never any other kid that did not like fries. My 11y.o. would not eat fries, at all. He finally started to eat them when he was about 8 or 9 and will now eat them only if they are fresh, hot, and salty.
Oh, now I don't feel so bad. My kids always eat breakfast but really just graze for lunch. Both of the kids are able to run the microwave and toaster oven so they can heat their own food up, if need be.
New favorite lunch... A Mozzarella stick wrapped in a tortilla and microwaved for 15-30 seconds, then served with warm marinara or spaghetti sauce for dipping. Usually the kids eat a piece of fruit or a few carrots with it. It's even faster than sandwiches, and they think it's great!
Jacob usually getas a good lunch, as long as it has veggies with it lol he also eats breakfast and of cource dinner
We do several things. Leftovers Fried noodles (made out of top ramen) grilled cheese and tomato soup chili and rice chili dogs and mac and cheese pb and j tuna sandwiches and chips chicken and dumplings meatball soup Loaded baked potatoes lunchmeat sandwiches burritos pesto and garlic bread chef's salad open faced chicken sandwiches fish sticks and fries And I like to try new recipes so sometimes I try them out for lunch instead of dinner.
I know I'm probably late with this thread, too but I'm glad I found it. This has been something that has been a source of struggle for our family, too. My two that are still @ home are 14 & 15 so they can (or should be able to) tell me what they'd like to have when I make a grocery run. Some of their favorites are: Popcorn chicken Pizza rolls Hot pockets Burgers (the individual frozen ones that we can throw on the grill) Fish sticks Pizzas Mini pizzas (I use hamburger buns with pizza sauce, pepperoni & colby jack cheese) Grilled Cheese Soups Spaghetti-os Ramen noodles I know this isn't the healthiest but since I will be home during the day and dad will be @ work, hopefully, some of this will change.
How do you do this? Do you prepare the ramen noodles according to the package and then fry them in EVOO? Sounds interesting.
my kids LOVE home made bean and cheese burritos- Pb&j is oldest boys favorite, I think he could eat it all day every day. younger one likes cheese of any kind. also applesauce. plus most of the other things listed above. They absolutely hate egg salad, which is weird because Hubby and I love it.
We cook the noodles until they are done, drain them and rinse them in cold water and then let them dry again until they aren't all wet and all the water is pretty much gone, you'll have to toss the noodles a few times to get the water to drain right otherwise you will have a mushy mess when you add them to your pan of veggies. Usually, we use either leftover meat from the night before or even bacon and dice it up add it to a pan with some oil, EVOO works or even veg. oil. Add chopped onion, garlic, carrots, broccoli (anything your family likes) and cook it to your desired consistency. Add a little bit of the seasoning packets from the ramen if you like and then the noodles, toss everything until it's combined and covered with seasoning and cook until the noodles are heated through.
