It is almost strawberry season in Ohio. I was wanting to know if you can put strawberry jam in jars without using pectin. Last year we made some with and some without. The ones without was a little runny. Could we substitute with unflavored gelitan?

I don't think so, but can't say for sure. But you could try and see what happens!!! Is there a reason you don't want to use pectin?

Last year we made half with and half without, the half without was a runny and Amy would like it to be more set.

I make strawberry jam without pectin every year..

    4 cups of cleaned berries
    4 cups suger
    1/4 cup lemon juice

After I've cleaned the berries I put them in the blender to make them smooth.

Put it all in a heavy bottomed pot and cook on high stirring often.

****to test if it's ready to put into jars *****
    1) Put a plate in the freezer till it's good and cold.
    2) put a spoonful of jam on the plate and return it to the freezer for 2 min.
    3) take it out and run your finger through the jam, if it doesn't run back together it's ready!

This is so easy and yummy !!
    Happy jamming !

To be honest I have made it with pectin that turned out runny. I guess I did something wrong that time. However, it makes wonderful syrup to go on waffles and pancakes. YUM! I am ready to go find some strawberries.

Thank you all for your answers and Amy is going to try a small batch to see how it turns out. Pectin is too expensive, so we don't want to use it. Thanks again.

Haven't made even the small batch yet, we will pick our strawberries on June 15th and make the jam then. I think we will make all of it without the pectin no matter what. We found it is too expensive. I'll let you know when we get them all done.

I'm hoping to pick this week! Wanted to go tomorrow, but I need to help paint the Sunday School room at church.

I wish I could just go and pick some strawberries. I need to get a patch going here. I picked some rubarb yesterday and now I need some strawberries to make a strawberry/rubarb pie. Yumm...

I should try to make some jam without pectin too. Do you have to cook it longer?

Why make Jam without Pectin? I thought that you boiled away more of the fruit when you didn't use Pectin and Pectin is all natural I didn't think it was an issue?

    Am I missing something? : (

Ah. Ok. I can get that reasoning. I would just be concerned at the amount of the natural fruit I would be missing. I do agree that Pectin is expensive though.
