Rumpledoodles, Have you made them? They came out really rather flat, but they tasted really yummy! We left the raisins out, as we're not big fans of raisins; but I think they would have tasted good in there. And, no, they're not snickerdoodles! They're heffalump snacks!
Sure, I can. Here it is: RUMPLEDOODLES 1 c. rolled oats 1 c. sugar 1 c. flour 1 c. coconut 1/2 c. raisins 1 tsp. cinnamon 1 tsp. salt 1 T. baking soda 2 T. molasses 1/2 c. unsalted melted butter 2 T. boiling water Mix all together and spoon onto cookies sheets. Bake in 350 degree oven for 10-15 minutes (it took ours 10). One batch made 2 dozen nice-sized cookies. Enjoy!
P.S. If you have Pooh's Heffalump Movie (on dvd) the recipe is in the special features- my girls paused it several times so they could write it all down.

Oh, that splenda that is in the orange package works good. also there is a product called diabetisweet, I can't find it here, recieved a large sample from the company on request. also use 1/2 splenda from yellow bag and 1/2 amount of sugar should work.

Splenda does taste just like sugar, but it is expen$ive. I use it in my coffee because I wanted to stop using Sweet&Low. S&L has nutrasweet, which irritates your bladder. Crystal Light is pure nutrasweet, and when I drink that I'm in the bathroom constantly, plus sometimes the urge would linger even after I was done. Splenda doesn't do that at all and the taste is gentler, too.
Splenda is what we use here ! They even have a baking blend that is part Splenda/ part regular sugar. Can't do that though... glucose levels are too high .
A friend who teaches high school chemistry gave me the chemical low-down on Splenda. She says that there are sugars that our body processes, and sugars that just "passes through". She told me that Splenda IS SUGAR, but it's a different kind of sugar that passes straight through the body. That's why you can use it in baking, etc. and have the same sweet taste, but the body doesn't retain it. So it doesn't affect diabetes. DH was tested just yesterday for diabetes. If he tests positive (or even boarderline), I'll probably send you a PM, Rumps!
I was devistated when I even thought I had diabetes! I thought I was doomed, but with medication I am doing ok. ( I take 3 brands of medication just for the diabetes and one for BP and colesterol.) I took a class and found out that I could still have a few sweets but eating something like fruit is better, but if you have a sugar free cookie it is better than a full sugared cookie, but a splenda blend cookie is still better than the full sugared cookie, but if you allow for the carbs in your diet you can still have them. if that makes sense. And 2 regular (sugar) cookies is counted as one carb choice. (if they are normal size) but when you eat a sugar free kind the amounts varry but like the mother's cookies you get like 5 cookies for one carb choice wich makes life a little better knowing you don't have to compleetely rule out sweets.
