I have been searching for cookie recipes for us to make Wed. Some of the one's I have seen online appear complicated (even though I searched under "easy"). I really would like some that don't involve sifting (I don't have a sifter). Can someone post (or email me), some recipes they have done with their kids? I am particularly interested in sugar cookies, short bread and/or chocolate chip cookies. By the way, what does it mean to "cream" the butter? Mix it until soft?? creaming butter and sugar means you take softened butter (set out at room temp for a while)....... and use your mixer to mix the sugar and butter until incorporated.
cream cheese sugar cookies 1 cup sugar 1 cup butter, softened 1 (3-oz.) pkg. cream cheese, softened 1/2 teaspoon salt 1/2 teaspoon almond extract 1/2 teaspoon vanilla 1 egg yolk 2 cups all-purpose flour Colored sugar or decorator icing, if desired DIRECTIONS 1. In large bowl, combine all ingredients except flour and colored sugar; beat until light and fluffy. 2. Add flour; mix well. Shape dough into 3 disks. Wrap dough in plastic wrap; refrigerate 1 hour for easier handling. 3. Heat oven to 375°F. On floured surface, roll out 1 disk of dough at a time to 1/8-inch thickness. (Keep remaining dough refrigerated.) Cut with lightly floured 2 1/2-inch round or desired shape cookie cutters. Place 1 inch apart on ungreased cookie sheets. Decorate with colored sugar. 4. Bake at 375°F. for 6 to 10 minutes or until light golden brown. Immediately remove from cookie sheets. If desired, frost and decorate plain cookies.

The first recipe Amy posted looks like one that I have and they are very good. I don't have a sifter either. Both my mom and my sis told me that with the quality of the flour nowadays (look for pre-sifted) it really doesn't matter. If you have to put together dry ingredients, take a fork and gently mix them together. DO NOT let the kids bang the flour, though! I have a sifter somewhere but never use it. I use a wire wisk to "sift" flour and it works beautifully. I measure after wisking the flour and have never had a problem with it.
I saw a cute cookie idea yesterday on TV. Trace your child's hand on paper and cut it out. Lay that on rolled out cookie dough and cut out the hand shape with a knife. Bake and decorate with icing to make a turkey cookie. It was very cute.

I did not know there was such a thing as pre-sifted flour either. Live and learn. I am going to the store to buy the ingredients today. Thank you, thank you, thank you for your great recipes!!
A couple of hints: If a recipe calls for butter/margarine don't use the tub style. I learned this the hard way! Also, some recipes call for butter/margarine and I use shortening instead. I remember making chocolate chip cookies as a teen and that is what they called for. If I make them the way the recipe is set up now, they never come out right.
