Bread Recipe Swap

    The bread machine thread got me thinking-I usually make the same breads over and over and over and over.

    So I thought maybe a bread recipe (by hand or bread machine) swap thread might be nice.

    My most used recipe is my quick rolls

    I'll share a couple more recipes later :)

    I yield the floor to Jackie whose Amish Country White Bread is my family's favorite. Jackie will say it is not hers but I got it from her so it will always be Jackie's bread at my house.

    Lol, yep, it's not "my" bread, but it is the best, easiest, most consistent recipe ever. Do a search on here for it, also for Singing Bread. That's another good one someone on here has posted before.

    Beth, yesterday was Dad's birthday. His lady-friend wanted invited us to come over (to Dad's place) for dinner Wednesday to celebrate. I asked her what I should bring, and she said whatever. Then she called back, asking if I had "my mom's" potato salad recipe. I was amused by that, because Mom got that recipe from ME. And my copy says "Mrs. Allen's Potato Salad". Mrs. Allen was the mother of a guy I dated off and on for ELEVEN YEARS. I actually called her up one day about two years after he got married to ask her for the recipe. So I was tickled by her asking me about "Mom's" recipe! (But I'll tell you, it was a bit strange having another woman in Mom's kitchen, though I honestly believe Mom would be pleased with Dad's friendship with her!)

    Found it-posting it in this thread so I can easily find it, I'm making whole grain bread with flax seed tomorrow but will probably try this later this week.

    Jackie's Amish Country White Bread

    3 tbs. sugar
    2 tbs. butter
    1 tbs. salt
    2 cups hot water*
    1 tbs. (or 2 pkg.) yeast
    1 tbs. sugar
    1/2 cup hot water*
    6 1/2 cup bread flour

    *I try to get it between 110° and 120°

    combine first three ingredients in a large mixing bowl. Pour 2 cups hot water over top. Dissolve yeast with remaining sugar in 1/2 cup wataer. Add to first mixture, mix well. Add enough flour to make a workable dough. Knead for 10 minutes. Place in a greased bowl and cover with plastic wrap. Let rise for 30 minutes. Punch down, cover and let rise again for 15 minutes. Repeat for three more 15 minute periods, for a total of 1 1/2 hours. Divide the dough in half and shape into two loaves. Place in a greased 9x5" bread pan. Cover loosely with plastic wrap. Let rise 30 minutes. Remove plastic wrap and bake at 400° for 30 minutes. remove from pans and butter tops to soften.

    My sister loves Jackie's bread made with whole wheat instead of white flour and I think it is great half white and have whole wheat. I once made the whole batch of dough into a flat braided loaf for something at church and everyone loved it. It is so good!

    How heavy is it when made half and half? My family REALLY frowns on heavy breads! (Sigh....)

    Jackie, I don't think it is much heavier (if at all) than just white. I don't like the totally whole wheat as much but my sister loves it. I only use King Arthur flour though and maybe that makes a difference. I don't care for other brands for bread. I tried several before finding K.A.

    You use half whole wheat and half white? I usually use the high gluten (bread flour) I buy bulk at a farm market. I really have no idea what "brand" it is!

    LOL Jackie, I have made so many versions or your bread. I love it with any combo of flour but Freddy's loves plain white the best. My least favorite would be using all whole wheat but I have done half whole wheat flour and half white, mostly white with just a little whole wheat, you name it, I have tried it. It has all been great.

    Could you prep to just before rising and freeze? Thinking I wnt to prep these ahead for our vacation.

    I made the dough for JosieB's rolls before we left for vacation and froze it.

    Defrosted it yesterday and let it rise and bake! Yum!!! It was great with the meatballs we had last night! THANKS!!!

    How much yeast is in a packet? I buy the jarred but I'm finding a lot of recipes I'd like to use that call for a packet.

    2 1/4 teaspoon is equal to one 1/4 ounce packet of yeast.

    Krista-they are so quick I never tried to freeze before baking, glad it turned out well for your trip though :)

    I have made Jackie's bread with all whole wheat flour. I use King Arthur whole wheat and the bread comes out great. If I use any other whole wheat, it has to be half and half.
