Breakfast is important and I thought I'd share some found recipes for you.
Almond Crusted French Toast With Strawberries( serves 4)
Ingredients
12 slices brioche or Challah bread
1 cup finely ground roasted almonds
1 cup strawberries
3 large eggs
1/2 cup vanilla yogurt
1/2 cup milk
3 Tbs butter
Place the almonds in a large bowl. Whisk together the eggs, yogurt, milk and blend well. Heat the butter in a large skillet or griddle. 1/2 Tbs per french toast. Dip each slice of bread into the egg mixture then into the ground almonds.
Grill on both sides.
Cook on medium heat~
Create the strawberry topping by steming the berries and tossing them with some sugar. Set aside~

Coffee Latte Shake
This coffee shake is a thick and chilly delight, flavoured with coffee and chocolate. The trick to making it thick, is the instant chocolate pudding mix.
1 cup coffee, strong and cold
1 cup cold milk
10 ice cubes
1/3 pkg of instant pudding mix (chocolate)
2 tbs cocoa powder
Hazelnut creamer, to taste
Sugar, to taste
Combine everything in a blender, and blend until ice is crushed and shake is thick.

Tangerine or Orange Tea
A lightly spiced tea, with a twist of tangerine. You can always use orange juice instead, if you prefer. Either one goes well with cinnamon and cloves.
2 cups water
1 1/2 cups tangerine juice
1/4 sugar
1/4 tsp cinnamon
1/8 tsp cloves, ground
2 tea bags
In a saucepan, heat tangerine juice, water, sugar and spices until boiling. Reduce heat and simmer until sugar is completely dissolved. Remove from heat and add tea bags. Steep for 5 minutes. Strain out tea bags and serve hot.

Coconut Loaf
1/2 cup butter, softened
1 cups sugar
2 eggs
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk
1 1/4 cup flaked coconut
Cream together butter and sugar. Add eggs, one at a
time, beating well after
each. Beat in vanilla. Combine flour baking powder
and salt. Add to creamed
mixture
alternately with milk. Stir in coconut. Pour into
greased loaf pan. Bake at
350 degrees for 1 hour, or until toothpick inserted
near center comes out clean.

BLUEBERRY-LEMON TEA BREAD
(From unknown magazine)
Prep time: 20 minutes, plus 2 hours to cool
Bake 1 Hour and 5 minutes
1/2 cup margarine or butter, softened (1 stick)
1-1/3 cup sugar, divided
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 large eggs
1/2 cup milk
1-1/2 cup blueberries
1/4 cup fresh lemon juice
1. Preheat over to 350. Grease and flour 9 x 5" loaf pan.
2. In large bowl, with mixer at low speed, beat margarine or butter and 1 cup sugar just until blended. Increase speed to medium; beat until light and fluffy, about 5 minutes.
3. Meanwhile, in medium bowl, combine flour, baking powder, and salt.
4. Reduce speed to low; add eggs, one at a time, beating after each addition until well blended, occasionally scrapping bowl with rubber spatula. Alternately, add flour mixture and milk, mixing until just blended. Gently stir in blueberries. Spoon the batter into loaf pan.
5. Bake 1 hr and 5 minutes or until toothpick inserted in center, comes out clean. Cool loaf in pan on wire rack for 10 minutes. Remove from pan.
6. With skewer, (I use a toothpick) prick top and sides of warm cake in many places.
In a small bowl, mix lemon juice and 1/3 cup sugar. With pastry brush, brush top and sides of warm cake with lemon glaze. Cool cake on wire rack. This makes 16 servings.
*They recommend you make 2 and freeze one)
Each serving: approx. 195 calories, 3g protein, 31g carbohydrates, 7g total fat (1g sat), 28 mg cholesterol, 200 mg sodium.

PEAR SUNDAY FRENCH TOAST
(From Carol Schumacher, TOH magazine, I revised to Peaches)
1/4 cup plus 3 tbsp packed brown sugar, divided
6 tbsp butter or margarine, divided
1-1/4 tsp ground cinnamon, divided
3 medium ripe pears, peeled and sliced (I used peaches and I didn’t peel)
3 eggs, slightly beaten
3/4 cup milk
1 tsp vanilla extract
1/4 tsp ground nutmeg
6 thick slices French bread (1" thick), I use croissants cut in 1/2 lengthwise
Ice cream
In a skillet, combine 1/4 cup brown sugar, 2 tbsp butter and 1/4 tsp cinnamon; cook and stir until sugar dissolves. Add pears; (Or peaches) cook until tender. In a bowl, combine the eggs, milk, vanilla extract, and nutmeg, remaining cinnamon and brown sugar. Dip bread in egg mixture to coat each side. Melt remaining butter in a skillet. (I used a lot less butter here) Fry bread over medium heat for 2 minutes on each side or until golden brown. Top with ice cream and pear mixture. Yield: 6 servings.

Cantaloupe Bread
3 eggs
1 c. oil
2 c. sugar
3 tsp. vanilla
2 c. pureed cantaloupe, (approximately 1)
3 c. flour
1 tsp. salt
1 tsp. baking soda
3/4 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. ginger
1 c. chopped nuts, optional
Preheat the oven to 325. Grease and flour two 9 x 5 x
3" bread loaf pans. Sift together
the flour, salt, baking soda, baking powder, cinnamon
and ginger. Set aside. Beat
the eggs. Then add the oil, sugar, and vanilla. Add
the cantaloupe puree and mix.
Add the dry ingredients to the wet ingredients. Pour
into the pans and bake for 1
hour or until a tester comes out clean.

Tomato Gravy and Biscuits~ Ingredients
4 slices of bacon
16-oz can of diced tomatoes
1/4 cup flour
salt and peppe to taste
1 cup milk
buttermilk biscuits
Fry the bacon till crisp then crumble into small pieces
Add the flour to the grease(run fast) and cook for 1 minute to create a Roux. Add the tomatoes and the milk. Mix well then add the bacon, salt and pepper.
Serve over split warmed biscuits~
*Use fresh tomatoes this time of the year~

Fruit and Cream Layered Salad ~ by Lvs2Cook
fruitA wonderful fruit salad to make when fruit is at its best! It can be made a day ahead and you can use any fruit that you like.
Topping:
1 (3 ounce) package cream cheese, softened
8 ounces strawberry yogurt
1 tablespoon sugar
2 teaspoons lemon juice
2 cups Cool Whip Lite
1/4 teaspoon almond extract
Salad:
2 cups fresh blueberries
3 ripe peaches, peeled and sliced
2 cups fresh strawberries, halved
2 cups green seedless grapes
1 (11 ounce) can mandarin oranges, well drained
2-4 tablespoons toasted sliced almonds (optional)
1 whole strawberry, for garnish
1. In small bowl, combine cream cheese, yogurt, sugar, and lemon juice. Beat at medium speed until smooth. Add whipped topping and almond extract, continue beating until smooth and thick. Refrigerate.
2. In large glass bowl, layer blueberries, peaches and strawberries. Spoon on half of topping mixture. Layer on grapes and mandarin oranges. Spoon on remaining half of topping over fruit to within one inch of edge. Sprinkle with almonds. Garnish with whole strawberries. The salad can be made a day ahead and any fruit combination can be used.

SOUTHWEST SAUSAGE BAKE
(From Barbara Waddel, Taste of Home magazine)
(A great breakfast casserole)
6 flour tortillas (10") cut into 1/2" strips
4 cans (4 oz each) chopped green chilies, drained
1 lb bulk pork sausage, cooked and drained
2 cups (8 oz) shredded Monterey Jack cheese (I've used cheddar)
10 eggs
1/2 cup milk
1/2 tsp of each- salt, garlic salt, onion salt, pepper and ground cumin
Paprika
2 medium tomatoes, sliced
Sour cream and salsa
In a greased 13" x 9" baking dish, layer half of the tortilla strips, chilies, sausage, and cheese. Repeat layers. In a bowl, beat eggs, milk and seasoning; pour over cheese. Sprinkle with paprika. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking. Bake uncovered at 350 for 50 minutes. Arrange tomato slices over the top. Bake 10 to 15 minutes longer or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Serve with sour cream and salsa. Yield: 12 servings.
Note: Easily cuts in 1/2

Mom's Favorite Brunch Casserole
10 servings
6eggs
1 cup plain yogurt
1 cup (4 ounces) shredded Cheddar cheese
1/2 teaspoon black pepper
1 cup finely chopped ham
1/2 can (8 ounces) pasteurized process cheese
Preheat oven to 350°F.
1. Lightly grease 12X8-inch baking dish.
2.Combine eggs and yogurt in medium bowl; beat with wire whisk until well blended. Stir in Cheddar cheese and pepper.
3.Place ham in prepared baking dish; pour egg mixture over ham. Bake 25 to 30 minutes or until egg mixture is set. Use process cheese to write "MOM" or other desired message to Mom on top of casserole; let stand 2 to 3 minutes or until cheese is slightly melted.
Variation: Substitute 1 pound bulk pork sausage, browned and drained, for ham.

Veggie Pizza Triangles
2 tubes refrigerated crescent rolls (8 oz. each)
2 pkg. cream cheese, softened (8 oz. each)
3 T. mayonnaise
1/2 t. dried basil
1/4 t. garlic powder
1 1/2 cups vegetables, chopped (green and red pepper, carrots, broccoli)
2 T. salad seasoning
Press crescent rolls into a jelly roll pan, sealing perforations. Bake at 350 for 12 to 15 minutes, until golden. Combine cream cheese, mayonnaise, basil and garlic powder; spread thinly over cooled crust. Top with chopped vegetables. Sprinkle generously with salad seasoning. Cut into triangles. Serve at once or chill for up to 24 hours. Makes 24 servings.

Crockpot Morning Casserole
1 bag (32 oz) frozen hash browns
1 lb. bacon diced, cooked & drained or 1 lb. cubed, cooked ham
1 onion diced
1 green pepper diced
1 1/2 C. shredded Cheddar cheese or Monterey Jack cheese
1 dozen eggs
1 C. milk
1 t. salt
1 t. pepper
Place a layer of frozen hash browns on the bottom of the crock pot followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk, salt and pepper together. Pour over the crockpot mixture, cover and turn on low. Cook 10-12 hours.

That crockpot one looks neat - i wonder if you could let it cook all night without worrying? That would be neat to do for a Sunday Morning. Sounds like cleanup would be fairly easy too (okay, except for the bacon! :D)

I am utterly fascinated by the cantaloupe bread..I have never heard of anything like it. I will have to make that for my my mom; she adores cantaloupe.

actually not that I could detect--it is VERY moist.
