Today we are grilling hamburgers ( I didn't add anything special but we will season with kosher salt and pepper and garlic powder)

our basic is:
cheese (not for me)
lettuce
tomato
onion (red)
pickle
mustard
ketchup
mayo
(or any of the above)
I really like a slice of grilled pineapple and Iron Cheff sauce on mine.

I found some recipes of what others add to make thier hamburger special. Let us know what you add to make your burgers special too.:lol:

If you eat the vegetarian burgers tell us how you prepare those too. (whats the best brand)

This is what I mix up in with my hamburgers now sometimes if I want a change they are really good

1/2 pack Lipton Onion Soup
1 Egg,slightly beaten
1 Tablespoon Worcestershire Sauce
1 teaspoon Seasoned Salt
1/2 teaspoon Pepper
1/2 teaspoon Garlic Powder

and it comes from cubbybears hamburger steak & Gravy Recipe

Hamburger Steak and Gravy
1 1/3 pounds Lean Ground Beef
1/2 pack Lipton Onion Soup
1 Egg,slightly beaten
1 Tablespoon Worcestershire Sauce
1 teaspoon Seasoned Salt
1/2 teaspoon Pepper
1/2 teaspoon Garlic Powder
1/3 Cup Self-rising Flour
Combine all ingredients except flour.Shape inot patties.Dredge patties in flour.Heat 3 tablespoons of oil in skillet.Brown patties in oil over medium high heat on both side.Remove from skillet.
Gravy
1/4 Cup Self-rising flour
1/2 teaspoon seasoning salt
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 Cups Water
Combine gravy ingredients in a bowl,mixing well with a wire whisk.Pour into skillet,stirring constantly until gravy thickens(only takes a few minutes)put patties into gravy and turn to coat.Cover,reducce heat and simmer 15 minutes or until done.Can put brown patties in a casserole dish and cover with gravy.Cover casserole and bake for 30 minutes at 350º.I served this with rice,corn and bisccuits it was quick,easy and oh so good.

Southwestern Stuffed Burgers

2# gr beef
1 C salsa
1/2 C crushed tortilla chips
1 t Tabasco sauce
1/2 t pepper & Salt
6 Oz. sharp chedder cheese, cut into 6 (1/2"- inch thick) pieces.

Combine all but cheese. Divide into 12 equal pieces. Shape into patties. Place cheese on 6 patties then top with other 6, pinch edges to seal.

Good Hamburger

Salt and pepper to taste
2 T ice water
1 lb ground chuck or other ground beef
2-3 crushed ice cubes

Disolve salt and pepper in ice water. Use at least 1/2 t salt for each pound
of meat.
Add spiced water to meat, then add crushed ice and work in gently. Form 4
patties. Broil, grill or pan fry. Serves 4.

"Dissolving the spices in the water distributes then evenly throughout the
meat. This is how sausage makers add spices to sausage."

If you like blue cheese, (even if you think you don't) you'll never forget these burgers. Next time I would double the recipe and put the extras in the freezer. This is the most awesome burger I have ever had.

I did cook 2 slices of pepper bacon for my son in law to put on top of his (he "thought" he didn't like blue cheese *G*) He ask me to fix this again tonight!


3 pounds lean ground beef
4 ounces blue cheese, crumbled (I think I used more, wouldn't if I had small children as the flavor would be to strong for them)
1/2 cup minced fresh chives (can use green onions)
1/4 teaspoon hot pepper sauce (I doubled this; personal preference)
1 teaspoon Worcestershire sauce
1 teaspoon coarsely ground
black pepper
1 1/2 teaspoons salt
1 teaspoon dry mustard
12 hamburger buns



In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt and mustard. Cover, and refrigerate for 2 hours.

Preheat grill for high heat. Gently form the burger mixture into about 12 patties.

Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

NOTE:
I did double the hot sauce; personal preference. Will try the Chipotle Tabasco next time!

Be sure your pat around the edges so the blue cheese doesn't come out of the burger, I just rounded mine up and patted real well and didn't have any problmes, I can see where you might have if you don't check them.

BROWN DERBY STEAK:

Serves: 8

Effort: easy
Comments: This is a nice change of pace from regular hamburgers

INGREDIENTS:
2 lbs. Lean ground beef
2 eggs, slightly beaten
1 T. dry mustard
1 t. liquid smoke
1 1/2 T. prepared mustard (I used hot dijon mustard)
1 t. salt
1 t. ground black pepper
1 T. worcestershire sauce

INSTRUCTIONS:
Combine all ingredients and shape into patties.
Cook on grill to desired doneness

I make burgers from half ground beef and half ground turkey. I put onion, red pepper and portobello mushrooms through the food processor so they are minced fine and add them to the meat with some seasoned bread crumbs, garlic powder, dried mustard, crushed basil and milk to pull it all together. Sometimes I add pesto sauce in place of the milk. The oil makes them moister. Then they are formed and grilled. The meat actually tastes better if they are allowed to sit and let the flavors blend. My 10-year old eats these and prefers them over any other burger. He says 'These are so great, Mom!'

FETA-STUFFED BURGERS
1 lb. lean ground beef
1/4 cup crumbled feta cheese
4 kaiser rolls, split, toasted

Preheat grill to medium heat.

Shape meat into 8 thin patties

Cover each of the 4 of the patties with 1 tbsp. feta cheese; top with second patty. Pinch edges of patties together to seal. Place on grill.

Grill 7 to 9 minutes on each side or until cooked through. Fill rolls with patties.

Makes 4 servings.

Try it with Blue or Gorgonzola Cheese instead of Feta

Greek Turkey Burgers

1 pound ground turkey breast
4 pimento stuffed olives -- chopped
1 tablespoon dried parsley
1 teaspoon minced garlic
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup fat free sour cream
4 pita bread rounds
1 small cucumber -- diced
1/4 cup Feta cheese

Prepare charcoal grill for direct-heat cooking. Remove cooking rack from grill and spray with non-stick cooking spray.

In medium bowl combine turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper. Evenly distribute mixture into four burgers (approximately 4 1/2-inches in diameter.

Grill burgers 2 to 3 minutes per side until meat thermometer registers 160º to 165º, and meat is no longer pink in center.

To serve, spread 1 tablespoon sour cream on pita. Place cooked burger on bottom half of pita and top evenly with cucumber and 1 tablespoon Feta cheese. Fold over top half of pita and serve.

Pepper Cheese-Stuffed Burgers

1 1/2 pounds ground beef -- 80% lean
2 ounces Monterey Jack cheese w/jalapeño peppers -- thinly sliced, * see note
Salt and pepper -- if desired
4 hamburger buns -- split
4 lettuce leaves
4 slices tomato

Divided ground beef into 8 equal portions; shape each into 4-inch diameter patties. Place equal amount of cheese in center of 4 patties. Top with remaining 4 patties; press edges together to seal securely. Place patties on grid over medium coals (see notes). Grill 10 to 12 minutes or to desired doneness, turning once. Season with salt and pepper to taste. Toast buns on grill 1 minute, if desired. Arrange 1 lettuce leaf on each bun bottom; top each with 1 burger and 1 tomato slice. Cover with bun tops.

Grilled Pacific Burgers

1 Dole Fresh Pineapple
2 pounds lean ground beef or turkey
1/2 cup bottled honey mustard or honey Dijon
barbecue sauce
8 Kaiser rolls or large hamburger buns
8 Dole Green or Red Leaf Lettuce leaves
8 slices Cheddar cheese
8 red onion slices

Twist off crown from pineapple. Cut pineapple in half lengthwise. Cover and refrigerate one-half for later use. Remove skin from remaining half; cut into 1/4-inch slices.

Shape meat into 8 (4-inch) patties. Grill or broil meat 10 to 15 minutes on each side or until meat is no longer pink in center, brushing occasionally with barbecue sauce and adding pineapple the last 10 to 15 minutes of grilling.

Serve burgers on buns with lettuce, pineapple, cheese, and onion.

This recipe yields 8 servings.

Jumping Jacques Jalapeño Burgers

1 pound ground beef
1 tablespoon cream
1/2 teaspoon salt
1/2 teaspoon pepper
4 teaspoons jalapeño nacho slices -- chopped
1 small onion (approximately 4 tablespoons) -- diced
1 clove garlic -- crushed
4 teaspoons Salsa Picante
1/2 cup Cheddar cheese -- shredded

Mix beef, onion, cream, garlic, salt and pepper and form into 8 thin patties.

Top each of 4 patties with 1 teaspoon Salsa Picante, 1 teaspoon Jalapeño Nacho Slices and 2 tablespoons cheese.

Top with remaining 4 patties, press edges to seal in toppings.

Grill over medium coals for 12 minutes. Turn once after 7 minutes.

Description:
"This burger can stand alone or be eaten with lettuce and tomato. Spread bun with or dip in extra Salsa."

Cola Burgers

1/2 cup crushed saltines (about 15)
6 tablespoons French salad dressing -- divided

1/4 teaspoon salt
1 1/2 pounds ground beef
6 hamburger buns -- split

In a bowl, combine the egg, 1/4 cup cola, cracker crumbs, 2 tablespoons salad dressing, Parmesan cheese and salt. Add beef and mix well. Shape into six 3/4-in.-thick patties (the mixture will be moist). In a bowl, combine the remaining cola and salad dressing; set aside. Grill patties, uncovered, over medium-hot heat for 3 minutes on each side. Brush with cola mixture. Grill 8-10 minutes longer or until juices run clear, basting and turning occasionally. Serve on buns.

Reuben Burgers

In a bowl, combine pork, salt, pepper and garlic; mix well. Shape into 16 patties, about 3/8 in. thick. Spoon 1 tablespoon sauerkraut in the center of eight patties; top each with a second patty and press edges to seal. Grill, uncovered, over medium heat for 6-8 minutes on each side or until juices run clear. Top with cheese. Serve on buns.

1 teaspoon ground cumin
Salt -- to taste
Freshly-ground black pepper -- to taste
4 crusty Kaiser rolls -- split
4 leaves crisp romaine lettuce

Preheat grill pan over high heat.

In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.

Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.

8 ounces smoked white cheddar -- sliced
= (or smoked gouda)
2 roasted red peppers -- drained
2 tablespoons chopped cilantro leaves
= (or flat-leaf parsley)
Macho Gazpacho Vegetable Chunk Salad -- (see recipe)

Preheat grill pan or large nonstick griddle pan over medium-high to high heat. Brush mushroom caps with damp towel to clean them. Scrape away gills with a spoon.

Hawaiian Honey Burgers

1/4 cup soy sauce
1 (23-ounce) can sliced pineapple -- drained
8 hamburger buns -- split and toasted
Lettuce leaves -- optional

In a bowl, combine the first six ingredients; add beef and mix well. Shape into eight 3/4-in.-thick patties. Grill the burgers, uncovered, over medium-hot heat for 3 minutes on each side. Brush with soy sauce. Continue grilling for 4-6 minutes or until met is no longer pink, basting and turning several times. During the last 4 minutes, grill the pineapple slices until browned, turning once. Serve burgers and pineapple on buns with lettuce if desired.

Oriental Burgers

1 lb. ground round
1/4 c. low-sodium soy sauce
1/4 c. chopped green onions
1 tsp. grated peeled fresh ginger
1/4 tsp. black pepper
1 clove garlic, minced

Combine all ingredients and make 4 patties 1/2 inch thick. Grill to desired doneness.

KICKED UP BLUE CHEESE STUFFED HAMBURGERS

Ingredients needed:

2 pounds ground beef chuck
1 tablespoon minced garlic
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon Essence
12 ounces blue cheese
4 large whole wheat buns, split in half
Desired condiments, such as sliced tomatoes, romaine, sliced onions
Green Peppercorn Mayonnaise

Preheat a gas or charcoal grill. (Alternately, cook the patties in a large skillet over medium-high heat.

In a bowl, combine the beef, garlic, salt, pepper, and Essence, and mix gently but thoroughly. Divide into 8 equal patties.

In a separate bowl, crumble the cheese and form into 4 equal patties. Place 1 cheese patty on each of 4 beef patties. Top with remaining 4 beef patties, pinching the edges under to seal the cheese completely.

Place the stuffed patties on the grill and cook to desired temperature, about 2 to 3 minutes per side for medium-rare. (Alternately, cook the patties in a large skillet over medium-high heat.) Place the buns on the grill, inside down, until just warmed through, about 30 seconds. Remove the patties and buns from the grill and place on serving plates. Garnish with condiments and serve with the Green Peppercorn Mayonnaise.

Yield: 4 servings
