Ingredients
4 pounds red potatoes, chopped, (peeled optional)
5 boiled eggs, sliced
1 t salt
3 green onions, chopped
1 C mayo/miracle whip
2 T pickle relish
1 t mustard
1/2 t pepper
1 T sugar
1/2 C celery
Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool.
Add all ingredients in bowl, add potatoes last. Cover and chill 2 hours.

Sweet Potato Salad
2 red potatoes (or 2 sweet)
1 sweet potato
4 eggs
2 stalks celery, chopped
1/2 onion, chopped
3/4 C mayo
1 T mustard
1 t salt
1 pepper
Instructions same as above.

German Potato Salad
3 pounds potatoes, (peeled optional) and sliced
1/2 C onion chopped
2 t salt
1/2 C mayonnaise
1/4 C vegetable oil or water
1/2 C cider vinegar
2 T white sugar
2 T dried parsley
pepper to taste
bacon (optional)
Instructions same as above.

All of these are to taste. Red, white, sweet or green onions. Salt and pepper optional. I normally never peel the potatoes. I also don't use bacon. Potatoes are usually cubed in a reg potato salad and sliced in German. I also make mashed potato salad using any of them. Just mash the potatoes and add the ingredients. Yum.

I only eat warm potato salad -- mustard style
Potatoes, cubed and boiled until fork tender
1 C. mayo
2 T. mustard
1 T. parsley flakes
1 t. dill weed
1 t. paprika
a dash salt
2 T. relish (or more)
half onion or a few green onions finely diced
Mix the dressing stuff together, add to drained warm potatoes. Serve warm or cover and refrigerate left overs (at my house I always call my mom to get the left overs she likes it cold).
