Hummus

Put the following in the food processor and whiz:
1 chopped carrot
1/2 chopped red pepper
1/2 chopped green pepper handfull of parsley
1-2 cloves of garlic

slowly add:
1 1/2 cups cooked chick peas udo's/flax oil lemon juice sea salt. Serve with raw veggies or a garlic pita.

----------------------------------
DILL HUMMUS
1 can garbanzo beans (or the equivalent fresh cooked)
1/4 to 1/2 cup tahini. The original calls for 1/2 cup, but it is too tahini-ish for me.
1/4 cup water
2 tablespoons lemon juice
2 tablespoons olive oil
2 cloves garlic chopped
1/2 teaspoon Real Salt
1/2 teaspoon cumin
1/2 teaspoon dill
1/2 teaspoon chili powder

Whirl it all in the food processor.

This is really good in toasted Pita Bread with sliced cucumbers, tomatoes, sprouts, etc. or as dip with carrots, cucumber slices, etc.

2 cups white beans, canned, drained and rinsed

Combine beans, tahini, lemon juice, garlic, cumin, and cayenne in the food processor. Blend and gradually add oil and warm water until the mixture has a creamy consistency. Refrigerate overnight for the best flavor.
Serve with warm pita

It's so good. I like to eat it on a piece of bread with a slice of onion, tomato and lettuce.

On Monday night we had CousCous for supper. We ate it with salad and just heated up some tortillas to eat with it. I don't know how to make it from scratch. We used two boxes of Casbah Natural Foods Lemon Spinach CousCous. It was really good! I think it's organic also.

But we like Hummus too! Thanks for the recipes!
