I forget where I saw this, but is it ever easy and good!
This makes a large panful.
Ingredients:
2 boxes manicotti shells, uncooked
2 jars spaghetti sauce, any type
2 pks, 12 strands each, string cheese
grated mozzarella for topping
Directions:
Spread one jar of sauce plus one jarful of water in bottom of large, rectangular pan.
Insert one string cheese into each manicotti shell and arrange in pan.
Cover with second jar of sauce, plus another jarful of water.
Cover all with foil, bake at 350 for about 1 hour.
Remove from oven, uncover and sprinkle with grated mozzarella.

Hmmmmmm.....I wonder if you could do that with salsa and use the colbyjack--or better yet, pepperjack--"string" cheese?????

Oh, that sounds GOOD!!! The problem is that DH is a PAIN about cheese. Maybe I could cut it in half and make it when he's gone..... I think my kids would love it. And it sounds as if it would warm up well, too.
Another one my kids love:
Put one package of Chicken Nuggets into a baking pan, dump a jar of spaghetti sauce over it, cover with Mozzerella cheese, and bake according to what it says on the chicken box.
Again, my kids love it, but it's something we have when Daddy's gone. My girls have made it on "their own".

These sound great. Jackie, your recipe sounds like a very easy version of Chicken Parmesan.

Oh, use whatever sauce or cheese you like. The noodles do stay firm, so it does reheat nicely.
I'm wondering if this could be done with those large shells. I have many recipes calling for them, but once they are cooked they are a trip to stuff. They're so floppy and soft!!
I have a recipe for Cheesesteak Sub casserole I will look for and post. It's DELISH!! It's easy, tastes just like a carry out sub, but so much less expensive. It's another one that makes alot and reheats well.

Thanks alot sounds like a wonderful idea to do with the kids. But, we are new to the area so don't have any idea where to put them.

I can't find the actual recipe, but this is how I remember it.
CheeseSteak Sub Casserole
Ingredients:
1 loaf unsliced french bread
1/4-1/2 c. mayo
1 onion, sliced or chopped
1 pepper sliced or chopped
1- 2lb. box frozen sandwich steaks, like steakums
1, 28 0z. jar spaghertti sauce Or 2, 15 oz. jars pizza sauce
1/2 lb. shredded mozzarella or cheddar cheese OR 2 jars cheddar cheese sauce
Extras as desired
shredded lettuce
chopped tomatoes
anything else you would like on a sub
Directions:
Fry steaks until done. Add peppers and onion and cook until vegetables are tender.
Meanwhile, slice bread and arrrange in large rectangular pan.
Spread with mayo.
Top with steaks and vegetables.
Top with sauce
Sprinkle with shredded cheese or spread cheese sauce on top.
Cover and warm through in 350 degree oven for about 25 minutes.
Meat can be changed to make variations-
hamburger, crumbled bacon and american cheese can make a bacon cheeseburger casserole.
sliced meatballs and mozzarella- meatball sub casserole
Experiment!
I have wondered if crispy, cooked french fries could be substituted for the bread? The mayo could be skipped or mixed with the pizza sauce?

Here's another one I have the recipe for.
Stromboli
Ingredients:
2 loaves frozen bread dough
1/2 lb. each, sliced thin- ham, pepperoni, mozzarella
1/4 c. each- chopped onion and green pepper
1 jar pizza sauce
1t. each- oregano, garlic, pepper
Directions:
Thaw dough and let rise double. Punch down. Roll loaves into rectangle, 12x15.
Layer ham, pepperoni, mozzarella, onion, peppers, and sauce on one half of the rectangle. Repeat layers until done.
( there might be a little left over)
Sprinkle with seasonings.
Fold over other half of rectangle. Pinch ends together to close.
Bake 30 minutes at 375 degrees.
If desired, top can be brushed lightly with melted butter before baking.

Becky, HMMMMMMMMMMMMMM they all sound so good I can't wait to get more. Like I said I love new recipe and one that my dd's can help me with they both are into cooking right now and love to cook.

Oh, Kris! I wish! I hate to cook. I hate the cleanup, I hate the mess.
Menu planning isn't easy because I'm the only one who will eat a vegetable, although Jeannie, my 4yr old will eat baby carrots. Bless my son's heart- I tried to get him to eat carrots by shredding them into meatloaf and telling him it was cheddar cheese! He was maybe 9 at the time and he says' What's wrong with this cheese? It won't melt.'
Sometimes I get fed up trying to plan menus and I'll have 'breakfast week', 'Italian week', 'sandwich week' I have told my husband one week we're having 'cereal week'
The next time you're in the store get a copy of Quick Cooking magazine. That's where my recipes come from. They have a regular column called 'Give me Five or Fewer', which is recipes that have 5 or fewer ingredients.
My only complaint with that magazine is, all the women love to cook, it seems they all wortk full time jobs while helping on the family farm while volunteering at school while chairing a community activity while working in a soup kitchen before they carpool the neighborhood kids to sporting events! I exaggerate, but it does get sickening.
Maybe I should send in my story! :lol:

Stroghanoff (the american way)
A package of egg noodles
a can of cream of mushroom soup
1/2 cup water
1/2 package of philadelphia cream cheese (YEAH buddy, it is to slobber!)
salt and pepper as much as you want
ground turkey or groud beef, fried to brown
half an onion, I cook the chopped onion with the meat until transparent
2 Tbsp parsley
Cook the egg noodles until soft, drain. Add cream of mushroom soup, water, and cream cheese. Cream cheese is what makes this thing rich. :lol: Add the meat and spices and onions and mix it all together. I usually serve this up as is but you can bake it in the oven at 350 for about 15 minutes til crunchy on top, maybe with some breading like croutons or cheese crumbs on top for extra zing.

Okay, folks, here's another one.
Bacon Cheeseburger Rice
Ingredients:
1lb. ground beef
13/4c. water
2/3 c. bbq sauce
1T mustard
1/2 t. pepper
2t. chopped onion
2 c. uncooked rice
1c. shredded cheddar
1/3 c. chopped pickles
5 strips bacon, cooked and crumbled
Directions:
Cook ground beef and drain. Add next 5 ingredients and bring to a boil. Stir in rice. reduce heat and cook until rice is tender, stirring frequently. Reduce heat, add cheese, pickles and bacon. Cook until cheese is melted.

Cheeseburger Sloppy Joe
Ingredients:
1lb. ground beef
8oz velveeta, cubed( store brand o.k.)
chopped onion - as desired
chopped pickles - as desired
ketchup - as desired
mustard- as desired
Directions:
Cook ground beef until done and drain. Add cubed cheese.Lower heat , cover and cook until cheese is melted. Stir often. Remove from heat and add onion, pickles, ketchup and mustard. Stir well and seve on buns or in a hollowed out french bread loaf.
I have to make a giant pot of this stuff. In the rare case that any is left it can be served over mashed potatoes or noodles or even fries.
