I need Ideas!!!!!! we are hosting a revival and I am having to cook for lunch and after service. Now, the last couple we had hold us a revival liked to cook their own lunch in thier camper, so I just had to cook for after service, which I like to make a lite meal. I need Ideas for both help!!!!
this is what I have so far:
chicken and sausage gumbo
chilli
chicken noodle soup (homemade)
philli steak sandwiches
beef stew and cornbread
sandwiches
brisket with the trimings
that is 7 , now I just need more
Please give me ideas!!!!!!!!!!!!!

Spagetti Casserole?
1 lb spags. - cooked
8 oz sour cream or plain yogurt
1 lb ground beef (chicken or turkey work too)
1 jar spagetti sauce
shredded mozzarella for the top
Mix cooked spags with sour cream and press into a 13 X 9" pan.
Brown ground beef and add sauce. Spread over spagettti layer.
Cover with cheese.
Bake at 350 for about 30 minutes until cheese is all bubbly.
Serve with bread and salad. :D

I make a super simple alfredo sauce that is fantastic over noodles, with or without chicken. Melt a stick of butter (I use half that), add a clove of garlic (at least!), add 1 pkg cream cheese (melt and whisk smooth), add up to 4 cups of milk or half-and-half, then add a standard size can of parmesan/romano cheese and Italian spices to taste. Sauce will thicken some after adding the cheese. I usually add less milk than it calls for to keep it thicker.

Pulled beef sandwiches. (Or pulled beef over mashed potatoes)
(Make the crock pot your best friend on those nights after the service! You come home and with minimal preparation, it's hot and ready to go! And if the service runs late, NO PROBLEM!)

I like Jackie's idea I call ours Italian beef for sandwiches--- cook your beef with 1 teaspoon of each: oregano, basil, garlic powder, onion powder, dehydraded onion, and salt. also a little bit of red peeper flakes and a packet of Italian dressing powdered mix. all of these are boiled in 4 cups of water with 3 beef bouilon cubes for 3 minutes and poured over the beef in the crockpot. (turn your crockpot on while you boil the liquid).
shred and serve on hoagie rolls.
other ideas:
meatballs and mashed potatoes and veggie
roast a turkey and slice and set out sandwich fixings
sausage and pepper sandwiches
grilled chicken ceasar salad with garlic bread
vegetable beef soup
enchiladas or loaded nachos
baked potato bar with salad (you can keep potatoes hot in a crockpot)

Amy, the next time I make pulled beef, I will do that. I usually have some on hand, because I'll buy four roasts when they're B1G1, and cook all four in my electric roaster and then freeze the meet. Great for something you need quickly!

Jackie, this is THE best smelling recipe ever in the crockpot and you serve the "juice" with the sandwiches like a french dip.......... my kids call it "heaven juice":angel:

Chicken & Rice Casserole
1 ½ c rice
2 small tins deboned cooked chicken
1 box frozen chopped broccoli, thawed
2 cans cream of mushroom soup
1 ½ c shredded cheddar cheese
1 tsp salt
1 can Durkee French Fried Onions
Preheat oven to 350 F.
Cook rice; combine all ingredients (except Durkee Onions) in large bowl, mix well.
Bake in large casserole (with Durkee Onions sprinkled on top) until cheese is bubbly and onions are browned.

* Salmon Patties, mac 'n cheese, peas
* Ham & Beans, fried potatoes (or no potatoes), cornbread muffins
* Chicken & noodles
Lighter:
* Chicken quesadillas, tortilla chips, salsa, guacamole, sour cream
* Hot ham & cheese sandwiches
* Pizza (like from Walmart deli)
* A selection of cubed cheeses, cubed summer sausage/ham/pepperonis, crackers, fruit pieces, veggies and dips - supply toothpicks to pick up food with.
