Here are some site I recently found for my 9yo to do a unit on castles with his dad over the summer.

THis is a great lesson plan that has the student do a lot of research in order to build a castle to the Baron's specifications. It is well laid out and has some good links already in the lesson plan. THis is the lesson plan that I am going to have our son follow with his dad's help.
